If it was disc size, don't the 360 and Wii have the same (dual layer DVD)? RAM size I could understand though, and I'm sure is an issue for a wide-open game like GTA.
I'm really looking forward to Table Tennis and I'll probably pick it up right away if the controls are good but I really don't see GTA making it to Wii, at least not in the form we know it. Table Tennis is going to have to be downgraded to be on Wii; I'm just hoping they START with the 360 models and work their way down, if that's possible. That'll give us the best quality possible on Wii rather than giving us GC level models.
For GTA, there doesn't seem to be any HUGE change in graphics, just scale. The Wii might be able to handle it if they scale the models down slightly and limit draw distances. Instead of seeing maybe 3 blocks in only see 1 at a time. They'd have to change the way it's played a little, but I guess it's possible.

@ #1, since the the resolution is lower on the wii the amount of storage required falls also as texture data etc. becomes smaller.

Since Wii doesn't use as highly detailed textures or models as 360/PS3, the visuals won't use up as much disc space.
