I didn't own a Cube before. And the first Cube game I bought after getting a Wii was actually Eternal Darkness. It's great. But my favorite so far...that's tough. Melee is great for multiplayer...Viewtiful Joe is amazing, too. Probably a toss-up between those three...

I never had a 'cube. But playing on my friends cube regularly was what made me decide to buy a Wii as opposed to sticking with Sony (this was before all the stuff about how the Wii-mote rocked was announced!)
Anyway, I recommend anyone to play Ikaruga, LoZ:Windwaker, SMS, Lego Star Wars I and II, any of the Rogue Squadron games and Mario Kart: Double Dash as a minimum!

Pikmin 2 (1 is a fucken awsome launch title)
Zelda Windwaker (I never played TP on the GC, but I am sure it is fantastic with Windwaker controls. It is counted as a Wii game to me though)
Metroid Prime (2 is AMAZING, but 1 game per franchise!)

Viewtiful Joe (2 is great also!)

Hrm, I had a cube for a long time (technically my wife's -- I convinced her to get it and it was her first console!), and I was frankly a bit disappointed. I have probably 2 dozen PS2 games, at least half of which are "gems", but I only own about 10 GC games. I notice that almost all the commenters above mention the same games. I feel like (for my tastes!) there were only 8 or 10 really good GC games over the life of the console. My list would probably be:
Zelda (1 game, maybe 1.5 including Four Swords, which was OK, but not great)
Metroid (2 games)
Pikmin (2 games)
Paper Mario
Smash Brothers
Mario (maybe, not my favorite)
Chibi Robo (maybe; lost interest towards the end)
RE4 (doesn't count since not GC exclusive)
Note that this list a) reflects my peculiar tastes, b) does not include accessories like the GBA player or ports like the Zelda Collector's Edition, and c) does not include cross-platform gems like PoP and Beyond Good and Evil. I also have yet to play Eternal Darkness and Tales of Symphonia, both of which I expect to be excellent. But when I go into the Used Gamecube section at EB, I usually just poke at the cases for a while, then shake my head sadly. Even at deep discount, most of the GC exclusives are a disappointment.

I really enjoyed the Cube for its quality rather than quantity. I probably played more games from the PS2 and XBOX, but I played the GC games MORE.
Seeing significant replay time are:
REmake and RE0 (and RE4, but now I have the Wii version)
LoZ: Wind Waker (have TP on the Wii)
Metroid Prime, MP2
Eternal Darkness
Pikmin

I'd actually be willing to say the GC is the best console I've ever owned, as far as the amount of quality titles goes. There wasn't much on it, but the ratio of good to bad games is considerably higher than what the PS2 or Xbox offered.
My top 10 games would be:
1) Viewtiful Joe

3) Wind Waker
4) Star Fox Assault
5) Ikaruga
6) Star Fox Adventures

Donkey Kong Jungle Beat also rocks my world. I'd love to have wireless bongos though. I know the graphics/gameplay might not meet the standards of some of you Nintendo elite, but it's a fun game.

Other than the obvious (SSBM, Super Mario Sunshine, etc.), I loved Second Sight. Telekineses and awesome story. Nothing like going through a creepy mental hospital at night, possessing a guard, and making them let out the dangerous patients that punch and kick them to death.

Hey guys, I agree very much with all of your lists, but there was a gamecube exclusive that everyone is overlooking.
BATEN KAITOS 1 + 2 from Namco-Bandai, were brilliant RPG's in almost every aspect.
If you haven't had the chance to play through either of them, I strongly suggest you do that, fantastic games.

To all of those who didn't pay attention to it (almost all people I know), you really need to give it a shot. One of the most entertaining experiences ever in multiplayer if you can get 4 friends and the gameboys necessary.
Also James Bond : Nightfire is underrated for multiplayer.
